The Swiss cuisine  reflects the geographic, linguistic and cultural diversity of this mountainous country. Each of the 26 cantons has its own culinary traditions. The Gastronomical swiss was influenced by the cold climate. The need to keep food for long winter months has resulted i many meats and some 150 varieties of cheese and dried meat. Swiss cuisine is often economical and robust, like the mountain farmers who created it. Many soups testify to this heritage shaped by the rustic lifestyle of coldness. Thus the cheese was born of the need to preserve the qualities of the milk of pasture for winter consumption. Naturally, recipes using cheese as fondue and raclette, become national dishes and sought.
